A Quick and Healthy Meal

Last night I was so hungry I just wanted to go grab something to eat and not cook! I knew that I had what I needed in my fridge to make a healthy and quick delicious dinner!
I started off with a head of Kale and made Kale chips., I got this idea from the wonderful Kath over at KERF.

These are super easy. Rip off the Kale leaves from the stem and rip into small pieces. Throw a little EVOO (Extra Virgin Olive Oil) and Sea Salt and cover and cook for 15 minutes at 350 degrees.
Then I take some Firm Tofu and cook it over the stove top.

Tofu is super easy to cook. I squeezed out all the extra water by placing a paper towel over the block of tofu and then setting a heavy pot on top of it, for about 15 minutes. I then chopped up a bunch of tofu into cubes and seasoned with Dill, Mustard Powder, and Hot Peppers. I cooked until golden brown.
Lastly I made my favorite, Butternut Squash! This is super easy and tastes like a million bucks. I took cubed butter nut squash and mixed it in a bowl with some sea salt, EVOO and a little honey. I then baked it for 25 minutes at 425 degrees.

Who says that you can’t eat quick and healthy?! Not only is this meal full of some wonderful nutrients, it is also super cheap and anyone can make it at home. Some good advice is to keep your fridge well stocked with essentials, that way you are a lot less tempted to eat out!
