Vegetable soup is perhaps the ultimate comfort food. It’s also a perfect way to get a ton of veggies in one bowl servings. This recipe calls for seasonal, fresh vegetables, a little extra time, and lots of love.  It pairs best with a cold winter day and a good book.

Country Vegetable Soup

Ingredients (makes 4 servings): Feel free to substitute canned/frozen veggies for fresh if that’s easier for you.

4 -5 large slicing tomatoes chopped (you can peel them prior to stewing, or leave the skin on)

1 large russet potato chopped

1/2 onion chopped fine

1/2 cup veggies – corn, okra, peas, lima beans, chopped carrots, green beans (use any veggies you like!)

salt and pepper to taste

Directions: In a medium sized pot, simmer the onion and tomatoes until they begin to break down and skins come off tomatoes. Remove skins from pot if desired. Add in potato. Simmer until potato slightly tender. Then, add in other veggies until fully cooked. This takes approximately 2 hours on the stove top. You can add a little water or veggie stock to the soup if necessary, but it shouldn’t need much. The recipe also does not require oil or heavy seasonings. It’s simply delicious!
