Garden Cucumbers In Hand: Cold Cucumber Walnut Soup

This week it’s cucumbers and lots of them. I attempted a cold cucumber and avocado soup recipe last week and just wasn’t happy with the results. The soup was a bit too thick and to be honest downright bland. I’ll try this soup out again in the future but until then, I went with this delicious cucumber walnut soup. I’m a big fan because the walnuts add protein and a punch of vitamins including high levels of vitamin E and Omega 3 fatty acids.
