Easy Vegetable and Egg Fried Rice

Fried rice is one of my favorite “go to” dishes when I want to cook up a lot of veggies, but also want a hearty meal. This fried rice recipe is quick, easy and budget friendly. It’s also a great one-dish meal.

Fried Rice (serves 2 persons)
Ingredients:
2 cups cooked rice (any kind you want)
2 eggs scrambled
any veggies you want (snow peas, carrots, onions, bok choy, mushrooms, etc)
6 tbsp of peanut oil (divided)
soy sauce
Directions:
1. Heat 3 tbsp peanut oil in a wok or skillet until piping hot.
2. While oil is heating, dry off veggies with a paper towel to remove any excess moisture. Add to wok and cook, season to taste with salt.
3. Once cooked, remove veggies and set aside. Take wok off the flame and wipe down with a paper towel.
4. Add remaning 3 tbsp peanut oil to wok and heat until very hot. Add the eggs to the wok and cook until set.
5. Add in cooked rice and fold into the egg mixture, breaking up egg clumps and tossing until well combined.
6. Return cooked veggies to the mix and combine.
7. Add in soy sauce, salt and red pepper flakes if you like.
8. Garnish with scallions and serve.
