Glorious Spanish Beans

We all know that beans are nutritious, filling, and tasty! However, sometimes I can get bored with the same old pot of beans. Therefore, I made up this very simple and quick recipe that packs a punch of spice and sweetness. Try this with a side of brown rice or freshly baked cornbread. It is definitely my go-to weekday meal.

Ingredients:

2 cans of pinto beans, rinsed
1 clove of garlic, minced
1 onion, diced
1 green bell pepper diced
1 can of petite cut tomatoes
chili powder
cayenne pepper, to taste
1 tsp Worcestershire sauce

Directions:

1. Preheat oven to 350.

2. Heat two teaspoons of oil in a pan over medium heat.

3. Add onion and green pepper, cook until tender.

4. Add garlic and cook for 30 seconds.

5. Add tomatoes and spices (to your taste preference) and stir.

6. Then add beans and saute for several minutes on low.

7. Remove the mixture and place in an oven-safe casserole dish and top with your favorite shredded cheese. (My choice for this dish is part-skim mozzerella!)  Bake for about 7 minutes or until the cheese has melted.

Then serve and enjoy!
