Same Dinner, But Different

I am still trying figure out how to make dinner for Ben and myself while staying on track with my healthy lifestyle  goals. Sometimes I do cook two different meals – last night it was a Portabella Burger for me and a Turkey Burger for him.

But, sometimes I would rather just make one meal and find ways to make it enough for him/less caloric for me.

Tonight I made stuffed shells. He’s been asking me to make this dish for a week. I made some small changes to “health-ify” the recipe like using cottage cheese instead of ricotta and going a little lighter on the cheese on one side – those would be for me.pan of shells

Then, I served him a “guy” sized portion and a side salad topped with ranch dressing.Bens shells

I served myself on a smaller plate and placed my shells on a bed of spinach sans dressing. The cheese and sauce from the shells was more than enough seasoning for the spinach.monica shells

At the end of the meal we were both happy and full! I didn’t feel like I had to eat something I didn’t want to just because it was easier. He didn’t feel like he was eating “girl food”.  I love finding ways to create a healthy dinner that both of us can enjoy!

And saving those calories at dinner leaves me room for dessert ;)
